KEY LIME PIE – LOW FAT
Ingredients for Crust. (or purchase a graham cracker pie crust).
1 ¼ cups fat free graham cracker crumbs
1 ½ Tbs. light margarine or butter cut into small pieces.
1 ½ Tbs. honey
Ingredients for Pie
2 tsp. unflavored gelatin
1/2 cup key lime juice
2 eggs, divided
1 can fat-free sweetened condensed milk
1/4 cup evaporated skim milk, chilled
1 tsp lime zest
For crust: Place graham cracker crumbs, light margarine or butter into a food processor and pulse until crumbly. Pour mixture into a 9 inch pie pan, spread evenly and press into place. Bake 350 degrees for 8-10 min. Cool.
Pour lime juice into large mixing bowl, sprinkle gelatin over the juice. Let stand for 5 mins. Stir to dissolve. Beat 1 egg and 1 egg yolk until thick and lemon colored, approx. 5 minutes. Add gelatin mixture and condensed milk. Beat low speed until just combined. In a medium saucepan, simmer 2 cups of water. Place the bowl with\the egg mixture over the saucepan to beat but DO NOT BOIL. Heat approximately 10 mins. Remove from heat and cool until mixture begins to set. Beat again till creamy and smooth. Beat chilled evaporated skim milk until doubled and fold into the above mixture. Add lime zest and fold in. Pour into prepared pie shell and refrigerate at least 3 hours.
