KEY WEST SOUP
2 Medium onions, chopped (about l cup)
2 cloves garlic, crushed
2 Tbs. olive or vegetable oil
1 ½ lbs grouper or fish filets, cut l inch pieces.
2 cans (10 ½ oz. size) chicken broth
2 broth cans water
3 med. tomatoes chopped (about 3 cups)
2 med. green bell peppers chopped (about 2 cups)
½ tsp each of salt, dried oregano leaves and cayenne pepper.
Cook onions and garlic in oil in Dutch oven, stirring frequently until onions are tender. Stir in remaining ingredients. Heat to boiling, reduce heat. Cover and simmer about 5 minutes or until fish flakes easily with fork. 8 servings.
