2 cups shrimp – cooked and chopped

2 Tbs. olive or vegetable oil

2 cups onion – thinly sliced

1 Tbs. flour

2 cups potatoes – cubed

1 cup boiling water

1 tsp. Chicken base

2 cups half and half cream

½ tsp. each of salt, pepper and red pepper.

 

Saute onions in oil until very well cooked.  Add flour and mix well.  Add potatoes, water and chicken base.  Cover lightly and boil until potatoes are cooked (not broken)  Add shrimp, cream, salt & pepper and heat just to warm.  Do not boil. Sprinkle parsley on top before serving.
